The San Telmo group introduced Melbourne to open fire pit-style cooking with the launch of Argentinian barbecue restaurant Palermo, the group’s fourth South American restaurant in six years.

On arrival, 80 media and influencer guests were transported to the streets of Buenos Aires, welcomed by tango dancers sweeping across the adjacent cobbled laneway, accompanied by a two-piece band and painted in traditional Argentinian ‘fileteado’ style.

The fiery sit-down dinner heroed whole splayed beasts, roasted over the asado pit, and fine Argentinian wine.
